Banana Protein Muffins
These protein muffins are great way to start the morning. They have just enough sweetness and are packed with healthy fats and protein. Did I mention they are gluten, dairy, egg, soy, and nut free? I like to smother on peanut butter in the morning when I enjoy these but feel free to add whatever you’d like.

  1. Preheat the oven to 350 degrees.
  2. Combine all oat flour, baking powder, protein powder, and salt in a separate bowl. If you do not have oat flour, take a cup and a half of gluten free rolled oats and add them to a blender. Blend until ground and have a flour consistency. Use this as your oat flour.
  3. Next, add the bananas to a bowl and mash with a fork. To the bananas add the almond milk, tahini, maple syrup, and maple extract. Mix well.
  4. Next, add the dry ingredients to wet ingredients. Mix well until combined.
  5. Spray the muffin tins or line the tins with muffin cups and grab a standard ice cream scoop. Scoop the muffin filling into the pan filling each up 3/4 of the way full.
  6. Put in the oven and bake for 40-45 minutes until golden brown and the a toothpick comes out clean when tested.
  7. Once removed from the oven, let cool before enjoying. Spread with vegan butter or any other spread you enjoy.
