Breakfast Sweet Potato
While I love oatmeal for breakfast and have it often, sometimes a girl wants a change. That’s where this Breakfast Sweet Potato comes in. Stuff it with whatever you like, but I am partial to bananas, cinnamon, granola, and maple syrup.

  1. To start, wash the sweet potato thoroughly and prick it with a fork all over. Microwave it on high for 5 minutes.
  2. Leave it sit in the microwave for another 5 minutes to continue cooking through. You will know it’s done when it is slightly wrinkly and springy to the touch.
  3. After the sweet potato has rested, remove it from the microwave. Slice the potato in half length wise and start to mash up the insides with a fork.
  4. Once it is mashed up with a fork, add the vegan butter, banana, cinnamon, granola, and syrup and serve. Enjoy!
