Roasted Carrots with Cumin Yogurt
One of the easiest and most delicious carrot side dishes. These would be great to accompany any meal and still keep the carrot intact making a beautiful presentation.

  1. Start by preheating the oven to 400 degrees. If the carrots have greens on the end, snip the greens off and set aside for later use or discard. Wash the carrots under water and then add them to the sheet pan.
  2. Drizzle with the olive oil, 1 tablespoon of salt, and 1 teaspoon of black pepper. Using your hands, mix and make sure all the carrots are coated.
  3. Roast at 400 degrees for 30 minutes or until the carrots are tender.
  4. While the carrots are roasting, grab a bowl. Add the coconut yogurt, cumin, lemon juice, garlic, and remaining salt and pepper and mix. Give it a taste. If it tastes flat, add more salt or lemon juice. To thin, feel free to add some water if you prefer to drizzle it on the carrots.
  5. When the carrots are done, remove them from the oven and place on a serving platter. Drizzle with the yogurt, and top with the parsley and serve.
