Smashed Potatoes with Horseradish Cream
Easy boiled and baked smashed potatoes with a horseradish cream sauce. It makes a delicious potato side dish, or a meal if you’re into that.

  1. Start by boiling a pot of water. Once boiling, add the potatoes. Boil until tender when pricked with a fork. The fork should be able to go through the potatoes without much force. Once done, drain off the liquid.
  2. While the potatoes are cooking, preheat the oven to 400 degrees. Line a sheet pan with parchment paper or a silicone baking mat.
  3. When the potatoes are finished and drained, pour them onto the sheet pan and one by one, smash them down with a fork. Don’t do it with incredible force, just gently press until they smash.
  4. Once all the potatoes are smashed down, brush them with the olive oil and sprinkle with salt and pepper. Next, put them in the oven at 400 degrees for 30 minutes.
  5. While the potatoes are crisping up, make the horseradish cream. In a bowl, combine the mayonnaise, horseradish, salt, pepper, and lemon juice. Mix until combined. If you want the sauce to be a thinner consistency, add a bit of water. Taste for seasoning. Depending on the type of horseradish you get will determine the potency. Feel free to add more or less to your liking.
  6. Once the potatoes are finished, remove them from the oven and top wth the horseradish cream and chopped parsley. At this point, move them to a serving dish if you wish to serve or leave them on the sheet pan for enjoyment.
