If you’re like me, you grow zucchini in the garden and get so much of it mid summer that you are handing it out to anyone who will take it just so it gets eaten. Well, it’s that time of year and I am looking for ways to use zucchini outside of a noodle. This hummus is great as a dip, a sandwich spread, a pizza sauce or straight off the spoon. The ways in which you can enjoy this are endless. Let’s get to it.
This recipe is super simple and requires just 7 ingredients and a food processor.
Zucchini, peeled, seeded, and chopped
Dried or Fresh Dill
To start, wash and dry all produce. Chop off the ends of the zucchini, peel, seed, and chop into chunks. Take a 1 cup measuring cup and measure out the zucchini and throw into the food processor.
To the zucchini add the cashews, tahini, lemon juice, garlic cloves, dill and salt. Process until smooth and enjoy!
- 3 cups Zucchini, peeled, seeded, and diced
- 1 cup raw cashews
- ¼ cup Tahini
- ¼ cup Lemon Juice
- 4 garlic cloves
- 2 tablespoons dried till or ¼ cup fresh dill
- 1 teaspoon salt
- Wash the zucchini
- Peel, seed, the dice the zucchini into large chunks
- Add all ingredients to the food processor and pulse until the desired consistency is achieved.
If it's too bitter for your liking from the tahini, add more lemon juice.
Serve with pita, fresh vegetables, or however you would like it.
