Do you get into the same routine for breakfast? My normal breakfast is oatmeal with some type of fruit, some coconut flakes, nuts, hemp seeds, spices and plant-milk. I do love this breakfast, but sometimes I just want something else. I am a huge supporter of grains and starches as a first meal of the day. They are so nutritious and filling and hold you over until lunch. Here is a way to have a sweet potato for breakfast that throws the normal routine out the window, and I am okay with that. Let’s get after it.
A purple sweet potato you ask? Yes, it sure is, and it is so delicious. I strictly buy them because they are purple because I love when my food comes in beautiful colors. They taste no different than a normal orange sweet potato, though.
This recipe came to mind when I just didn’t feel like having the same bowl of oatmeal for breakfast one Saturday morning. I wanted something that had syrup, but not pancakes or waffles because that took too much time for me to make and I was hungry, now. I checked my cupboard and thought a sweet potato sounded good.
My husband was off to get a hair cut so I made this giant one and stuffed it with all the good things and then left half for him when he got home. He looked at it with curious eyes before they rolled back into his head when he took a bite. It was safe to say that he loved it. The best part about this recipe is that you can add whatever you’d like to make this your own breakfast sweet potato. The sky is the limit.

- 1 whole sweet potato
- 1 medium banana
- 1/2 teaspoon cinnamon
- 1-2 tablespoons maple syrup 100% pure
- 1-2 tablespoons granola
- 1 tsp vegan butter

- To start, wash the sweet potato thoroughly and prick it with a fork all over. Microwave it on high for 5 minutes.
- Leave it sit in the microwave for another 5 minutes to continue cooking through. You will know it's done when it is slightly wrinkly and springy to the touch.
- After the sweet potato has rested, remove it from the microwave. Slice the potato in half length wise and start to mash up the insides with a fork.
- Once it is mashed up with a fork, add the vegan butter, banana, cinnamon, granola, and syrup and serve. Enjoy!
