Not just a traditional slider here! Here is a fun twist on a classic mini burger. This Falafel Slider recipe will please even the heaviest meat eater because the flavor is on point. I have eaten falafel in many ways on many occasions, but this is a fun game-day way to enjoy this classic mediterranean style meal. Come and see how I do it.
Falafel is one my favorite vegetarian/vegan recipes. I have had it in many ways and from many different restaurants but I have to say I am partial to mine. Maybe I am biased, but I encourage you to give it a try. Falafel is traditionally a fried dish. In order to make it healthier and less greasy, I like to bake mine. Because of that, these Falafel Sliders are completely oil free.
Don’t go thinking I did anything crazy and completely 100% abandoned the original dish because I didn’t. I do add some things that are not as traditional, though. For one, I add oatmeal to mine. The extra fiber and moisture the oatmeal soaks up while baking makes it an excellent addition. I also add quinoa to mine. It gives the patty a nice texture while also adding more protein to the dish. Just looking out for everyone here since consuming protein on a plant-based diet seems to be a huge concern for people in transition or is the reason for holding them back. I’m here to tell you, don’t worry about it. Eat a variety of plant foods and legumes you will get the protein you need.
Okay okay, you say. Get to the point already. Tell me how to make this amazing dish. Fine, here goes.
First, steam the quinoa according to package instructions. While that’s cooking, in a food processor, put in the chickpeas and the garlic. Puree until combined. Next, add the lemon juice, salt, cumin, onion and water. Puree again until combined. Lastly, add the parsley and puree, stopping to scrape the sides of the bowl if necessary. It should be a beautiful vibrant green color once done. Take the mixture and pour it into a bowl.
To the bowl, add the oatmeal and the quinoa and fold in with a spatula. Next, grab a sheet pan and line with a silicone baking mat or parchment paper. Take an ice-cream scoop, and scoop out the falafel mixture. Form small patties and place on the sheet pan. Continue to do that until it’s all gone. It should form about 12 patties.
Once the patties are formed, bake them off or throw plastic wrap over them and put them in the fridge to bake the next day. They don’t take long to bake so if you choose to cook them now, you’ll be enjoying them in no time. Bake at 400 degrees for 20 minutes.
Now, the important stuff. Are you sitting down? Really? We are going to talk toppings. Crazy stuff is about to happen. Take pre-prepared original hummus, sliced red onion, tomato, and greens and pile it on a bun and put the patty on. Boom you’re done. Did I have you thinking it was going to be something complicated? Gotcha!
