Happy Cinco De Mayo! Here is a twist on the traditional margarita, a prickly pear margarita. Let me show you how easy it is.
It all started when I was in Nashville visiting my sister a few weeks ago. We went to this fabulous restaurant for brunch and we all had cocktails, obviously. My mom ended up getting a cactus margarita which she had had before out west but this was the first time I had heard of such a thing. It came to the table in this glorious vibrant pink/purple color and I was immediately hooked. It could have tasted like vinegar and I probably still would have drank it because of the gorgeous color. I’m happy report that it was 100% delicious. How did they do it? I have absolutely no idea, but I made my version for you above and it’s glorious.
Everybody knows that a truly delicious margarita has a few ingredients. Tequila, lime juice, simple syrup, orange liqueur (sometimes) and ice. When I say lime juice, I mean actual lime juice. You know, the kind you get from a lime that was just freshly squeezed. If anyone reading this tries to recreate the margarita with some sour mix or that bottled lime juice that I’m not even sure is lime juice, please, just stop. If you can’t get fresh limes and squeeze your own juice, it’s not worth making the drink, ya dig?
WHEW! Now that that is cleared up, lets move on to the cocktail. Like I said before, good margaritas have a few ingredients. This beauty is no different. Tequila, lime juice, cointreau, prickly pear syrup, and ice. So, where does one get prickly pear syrup? I got this on amazon. It wasn’t the cheapest thing I have ever bought, but worth it in my opinion because, hello, color, and the fact that it can be used on anything. If you’ve got amazon prime, it will be here in no time.
To make this cocktail, add all of the ingredients into a cocktail shaker and shake vigorously with ice. Pour it into a salt rimed rocks glass and enjoy. One of the things to note here is this recipe is for a single cocktail. If you want to make it for a large crowd, just know that there are equal parts tequila and lime juice, and equal parts cointreau and simple syrup.
I mean, just look at that.
It is just the right amount of booze, lime, cactus, and orange. This cocktail is so refreshing and is definitely one for those that could sneak up on you. Drink responsibly everyone.
